This purple juice recipe is an antioxidant power house. It blends the earthiness of purple sweet potatoes and carrots with the sweetness of apples.

The Benefits of Purple Produce

There are countless benefits to including colors from the entire rainbow spectrum when you are juicing. My favorite way of doing this is by focusing on one color at a time and then alternating the juices each day (see my red, orange, yellow, and pink juices for example). Here are just a few of the health benefits of the ingredients used in this recipe:

  • The benefits of purple sweet potatoes: while sweet potatoes with orange flesh are high in beta-carotene, those with purple flesh are especially rich in anthocyanins (which are said to improve visual and neurological health, and protect against various diseases).
  • The benefits of purple carrots: just like purple sweet potatoes, purple carrots are high in anthocyanins, as well as beta-carotene, manganese, vitamin C, and potassium.
  • The benefits of purple basil: purple basil has a more intense flavor profile than traditional sweet basil. It’s also rich in vitamins A, B6, C, K, calcium, iron, and potassium.

Ingredient Notes & Substitutions

Purple sweet potato: you can sometimes find purple sweet potatoes at a regular grocery store, but it’s rather rare. You’ll have the most luck at Asian markets or purchasing them online. If you Cann’t find them at all, you can either use more purple carrots or regular sweet potatoes (just keep in mind that this will result in a different color.

Purple carrots: if you can’t find purple carrots, you can use more purple sweet potatoes or yellow or orange carrots instead.

Jona Gold apples: the apples are used to add the necessary sweetness without changing the color of the juice much. Any other sweet fresh fruits like pears will work just as well.

Purple Basil: you can either omit the basil or use regular sweet basil instead. Alternatively, a little ginger adds an additional boost.

Additional optional add-ons: some other ingredients that you can add to a purple juice include red cabbage and red grapes. I’ve personally tried a few different variations and I must say that grape juice only worked for me in smaller quantities and/or paired with a little lemon juice. Taste is subjective though, so I’d recommend trying different combinations to find your personal favorite.

🌿TIP: If you can’t find purple produce, you can easily turn this into an orange colored juice by swapping out the purple carrots and sweet potatoes for their orange counterparts. Instead of basil, you can use a little ginger or turmeric.

  • A juicer: a cold press/slow juicer is ideal for this recipe. Scroll down to see the one I recommend. 
  • Optional accessories: all other accessories are optional, but I’d recommend drinking juice with a reusable glass straw to protect your teeth. For easy storage, glass jars are always useful and can be repurposed in multiple ways.

How to Make This Purple Juice

  1. Prepare the produce: wash the sweet potato, carrots, and apples. Next, optionally cut the apples into quarters and remove the seeds.
  2. Add everything to your juicer: If you’re using a juicer like the one I have, you’ll be able to add everything at once (either the whole ingredients or smaller pieces), but if you’re using a different kind of juicer, you might need to cut the produce into smaller pieces and then add them one by one once you turn on it on.
  3. Juice & enjoy: Start your juicer and watch the magic happen. Pour the purple juice in glasses over ice cubes and enjoy!

🌿Tip: clean or at least rinse off your juicer right after using it. This way it’ll only take a couple of minutes and you won’t have to think of it later!

What is purple juice good for?

Purple juices often contain anthocyanins (which are said to improve visual and neurological health, and protect against various diseases). The antioxidants in purple juice also help fight inflammation and boost your immune system.

Aren’t juices too high in sugar?

A few things are important to consider here. While fruit sugar tends to get a bad rap, it is not the same as refined sugar and not bad for us per se (note: there are always exceptions, so if you have any health issues or concerns, like diabetes, be sure to consult your physician or a registered dietitian for the the most accurate information as it pertains to your individual situation). That said, the fiber in fruit allows for the sugars to enter our blood stream more slowly, but when we juice, the fiber is removed. That is why I recommend mixing fruits and vegetables whenever possible.

How long will this purple juice last in the fridge?

You can keep this purple juice in the fridge in an airtight container for up to 3 days, but it’s best consumed as quickly after juicing as possible in order to preserve a maximum of nutrients. Alternatively, you can freeze the juice in ice cube trays.

  • 3 medium purple carrots
  • 1 medium purple sweet potato
  • 2 Jona Gold apples or any other sweet apples
  • ½ handful fresh purple basil optional

Instructions

  • Prep the produce by washing the carrots, apples, and sweet potato. Next, cut the apple into quarters and remove the seeds (optional, you can also add the apples whole).
  • If you’re using a juicer with a wide opening (such as the Nama J2 Cold Press Juicer), add all ingredients at once. If you’re using a different juicer, cut the ingredients into smaller pieces and then add them one by one once you turn on the juicer.
  • Start juicing! Turn on the juicer and watch the magic happen.
  • Serve and enjoy! Pour the juice into glasses or jars over some ice cubes and enjoy.

Notes

This recipe makes about 750mL/3 cups of juice, which is the equivalent of 3 small or 1-2 large servings.
