The Benefits of Yellow Fruits & Vegetables
Have you ever heard the term “Eat the Rainbow”? Well, the same applies to juicing the rainbow. There are countless benefits to including colors from the entire rainbow spectrum when you are juicing. My favorite way of doing this is by focusing on one color at a time and then alternating the juices each day (see my red, orange, and pink juices for example). Here are just a few of the benefits of the ingredients used in this recipe:
- The benefits of yellow carrots: compared to orange carrots, yellow carrots contain more phosphorous and vitamin E. They’re also a bit sweeter in taste. On the flip side, orange carrots contain more calcium and potassium, so both are great in different ways. (Here’s an in-depth comparison between the two.)
- The benefits of pineapple: pineapple is high in bromelain, which could help fight bacterial infections. It also includes vitamin C, calcium, folate, iron, magnesium, and zinc. Overall, pineapple helps strengthen the immune system and is great for bone health.
- The benefits of golden beets: golden beets are packed with essential vitamins and minerals. They also include potassium, with supports heart health and healthy blood pressure levels.
- The benefits of mango: mangoes are rich in antioxidants and their high levels of vitamin A and C may help maintain healthy skin and hair.

Ingredient Notes & Substitutions
Yellow carrots: since yellow carrots can be harder to find, you can use regular carrots instead. It will just change the color of the juice a little.
Golden beets: while you could use red beets instead, they would turn this juice bright red, so if you’re trying to keep it yellow, simply add more carrots in case you can’t find golden beets. If, on the other hand, you don’t care about the color, red beets work perfectly.
Mango: instead of mango, you could use more pineapple, apples, peaches, or grapefruit in this yellow juice.
Pineapple: if you can’t find pineapple, you can use oranges, or apples instead. If you want eh juice to be a little less sweet, you can also replace the pineapple with more carrots and/or beets.
Kiwi gold (optional): golden kiwis are sweeter than green kiwis and are (in my opinion) much more delicious. Since this yellow juice only includes one kiwi, you can easily omit it or else replace it with a yellow peach or a couple of apricots.
Fresh ginger root (optional): I love adding ginger to almost all of my juices and it adds a nice little kick to this one as well. If you’re not used to ginger, be sure to start with a very small amount to see if you like it first and then gradually add more depending on your personal taste and preference.

How to Make This Yellow Juice
- Prepare the produce: wash the carrots, and beets and cut off the ends. Next, peel the mango and remove the pit (you can either peel the skin of manually or using a sharp knife). You don’t need to peel the kiwi and ginger, they can remain as they are, but feel free to rinse both. If you have a whole pineapple, cut off about 1/4 of it and then cut off the rind. If you purchased pre-cut pineapple, it’s the equivalent of about 2-3 cups.
- Add everything to your juicer: If you’re using a juicer like the one I have, you’ll be able to add everything at once, but if you’re using a different kind of juicer, you might need to cut the produce into smaller pieces and then add them one by one once you turn on it on.
- Juice & enjoy: Start your juicer and watch the magic happen. Pour the juice in glasses over ice cubes and enjoy!




Tip: clean or at least rinse off your juicer right after using it. This way it’ll only take a couple of minutes and you won’t have to think of it later!

Which ingredients are best to make yellow juice?
Yellow ingredients that will yield a lot of juice (and are delicious) include pineapples, yellow carrots, golden beets, grapefruits, and yellow apples. Other ingredients like mangoes, yellow peaches, lemons, golden kiwis, yellow bell peppers, or quince will yield slightly less juice, but lots of flavor. They are therefore excellent additions even if used sparingly.
What kind of juicer is best?

Aren’t juices too high in sugar?
A few things are important to consider here. While fruit sugar tends to get a bad rap, it is not the same as refined sugar and not bad for us per se (note: there are always exceptions, so if you have any health issues or concerns, like diabetes, be sure to consult your physician or a registered dietitian for the the most accurate information as it pertains to your individual situation). That said, the fiber in fruit allows for the sugars to enter our blood stream more slowly, but when we juice, the fiber is removed. That is why I recommend mixing fruits and vegetables whenever possible.
How long will this yellow juice last in the fridge?
You can keep this yellow juice in the fridge in an airtight container for up to 3 days, but it’s best consumed as quickly after juicing as possible in order to preserve a maximum of nutrients. Alternatively, you can freeze the juice in ice cube trays.

I think that any extended fast or cleanse should first be discussed with your physician. It’s always better to be safe when it comes to any kind of restrictive diet. Personally, I usually limit any cleanses or resets to 1-3 days.

- 3 medium yellow carrots regular carrots work too
- 2 small golden beets
- 1 ripe mango
- ¼ pineapple
- 1 kiwi gold optional, green works too

Instructions
