    The Benefits of Green Produce

    • Greens are generally high in heart-protective potassium and vitamin K, which aids the blood clotting process.
    • Celery can help reduce inflammation, has an alkalizing effect, and a low glycemic index, meaning that it won’t spike your blood sugar levels as much as other foods.
    • Spinach is high in vitamin C, iron, potassium, vitamin E, and magnesium.
    • Cucumbers are high in water, thereby helping you stay hydrated. They’re also high in vitamin K, which in addition to the above-mentioned benefits, is also great for bone health.
    • Romaine lettuce is nutrient powerhouse with its omega 3 fatty acids, calcium, vitamin C, iron, folate, vitamin A, potassium, manganese, copper, and magnesium.

    Green Juice Ingredient Notes & Substitutions

    Green apples: I find green apples like Granny Smith Apples to be optimal for juicing. They’re sweet, but not too sweet and blend with the other ingredients perfectly. You can, of course, use any other variety of apples. Tip: if you’re unsure about the amount of sweetness you’d like your green juice to have, start with one apple, taste test the juice, then add more if needed.

    NOTE: if you’re wondering whether apple seeds are safe to juice if you’re adding the whole apples to your juicer, check out the info box on this topic below the “how to” section in my Pink Dragonfruit Juice Recipe (but in a nutshell: in small quantities, yes. You’d need to consume upwards of 150 crushed seeds at once for them to be harmful.)

    Cucumbers: I love adding cucumbers to juices. Thanks to their high water content, they yield a lot of juice, making them an excellent choice that will help you save money in the long run. If you can’t find or don’t like cucumbers (or if they’re overpriced because of the season), you can use more celery instead.

    Celery: Don’t like celery? You’re in luck. You’ll barely be able to taste it in this juice, so this is the perfect way to consume it. If you can’t find it, however, you can replace it with more cucumber, or use fennel instead (just make sure you use smaller quantities since fennel has a very intense taste).

    Romaine lettuce: I personally prefer romaine, but any other type of lettuce like iceberg or butter lettuce will work too!

    Spinach: you can also use kale, collard greens, or any other leafy greens.

    Lime: I wanted to keep it green, so I used lime, but you can also use lemon in this green juice or simply omit.

    🌿TIP: for a little extra boost, try adding ginger root or fresh herbs like mint or basil to you green juice!

    A juicer: a cold press/slow juicer is ideal for this recipe. Scroll down to see the one I recommend. 

    Optional accessories: all other accessories are optional, but I’d recommend drinking juice with a reusable glass straw to protect your teeth. For easy storage, glass jars are always useful and can be repurposed in multiple ways.

    How to Make This Green Juice

    1. Prepare the produce: wash the celery, apples, romaine, cucumber, and spinach. Next, cut the apple into quarters and remove the seeds (optional, you can also add the apples whole). Note: if you’re worried about juicing apple seeds, read the note added to the ingredient section above.
    2. Add everything to your juicer: If you’re using a juicer like the one I have, you’ll be able to add everything at once (either the whole ingredients or smaller pieces), but if you’re using a different kind of juicer, you might need to cut the produce into smaller pieces and then add them one by one once you turn on it on.
    3. Juice & enjoy: Start your juicer and watch the magic happen. Pour the green juice in glasses over ice cubes and enjoy!

    Juicing Tips

    • Experiment with different produce combos. Not all juice tastes great! So if you’re new to juicing, you’ll need to find the combos that work best for you. I usually find that if I like a certain fruit or vegetable by itself, I will also like it in a juice. If, however, I don’t like it, I will only like it in a juice if I combine it with enough other ingredients that I do like.
    • Clean or at least rinse off your juicer right after using it. This way it’ll only take a couple of minutes and you won’t have to think of it later!
    • Choose the right juicer. Choosing the right juicer is key! I personally prefer cold press juicers (you can read an in-depth review of the juicer I use, the Nama J2 Cold Press Juicer, here.)
    • Don’t overdo it. It might be tempting to start replacing your meals with juices, but you’ll still need balance in your diet, so it’s best to combine juicing with a fiber rich and varied diet. If you’re planning on doing a juice fast, I’d recommend starting small (with 1-3 days max) and consulting your doctor or dietitian beforehand to ensure it’s safe for you to do.     Ingredients

    • 4 stalks celery
    • 2 green apples
    • 2 heads of baby romaine lettuce
    • 1 cucumber
    • 2 cups spinach
    • 1 lime
    • ½ thumb fresh ginger root optional

    Instructions

    • Prep the produce by washing the celery, apples, romaine, cucumber, and spinach. Next, cut the apple into quarters and remove the seeds (optional, you can also add the apples whole).
    • If you’re using a juicer with a wide opening (such as the Nama J2 Cold Press Juicer), add all ingredients, except the lime, at once. If you’re using a different juicer, cut the ingredients into smaller pieces and then add them one by one once you turn on the juicer. Either press the lime juice into the juicer or peel the lime and then add the fruit.
    • Start juicing! Turn on the juicer and watch the magic happen.
    • Serve and enjoy! Pour the juice into glasses or jars over some ice cubes and enjoy.

    This recipe makes about 750mL/3 cups of juice, which is the equivalent of 3 small or 1-2 large servings.
